Tasty Tortilla Stack

Ingredients:  butter, olive oil, ground beef, black beans, baby spinach, Italian parsley (same a small amount for the end), corn (canned/frozen), mozzarella cheese (not sure if mine was or not) - you can use shredded or tear up sandwich-ready cheese; I had leftover sandwich-ready cheese and made use of it.

- Directions -
Skillet 1:  Cook up ground beef on medium-high in skillet
Add black beans and half of Italian parsley
Simmer until ready to add

Skillet 2:  Warm 1 TBSP of oil and desired amount of butter
Cook corn and Italian parsley to your preference
Simmer until ready to add

Pre-heat oven to 400 degrees
Set tortilla shell(s) on baking sheet
Tear/Sprinkle cheese over tortilla
Add desired amount of meat/bean mixture
Layer spinach until it covers the surface
Layer preferred amount of corn on top
Tear/Sprinkle additional cheese on top
Add some Italian parsley garnishment on top

Since everything is freshly cooked and already warm from simmering, just let cook in oven for about 5-8 minutes until cheese it melted to your preference.
